With organic food items popping up everywhere from dedicated sections in giant supermarkets to shelves in smaller specialty shops, it's only natural to see a new wave of cafes and restaurants in the region following the trend.

And while the movement is fueled by the public's desire to maintain a healthier lifestyle, unlike some efforts in the past, these new establishments aren't sacrificing taste. These days, with the variety of fresh local produce, availability of spices and global crossbreeding of culinary styles, there's no need to.

All the vegetarian restaurants and cafes listed below report growing success and a warm reception from their customers — including the sometimes sudden awareness that something yummy can also be good for you.

Not surprisingly, given its alternative bent, New Paltz is the site of not one but two new natural food establishments.

Karma Road opened in February, and owner Seth Branitz says it's been gaining "new regulars" every week. "We have a guest book, and people are always writing things like, 'Thank God you're here,'" he adds. The restaurant, which features organic and gluten-free items, will soon be adding cooking classes to the ever-expanding offerings.
